Domaine Aubaï Mema
Domaine Aubaï Mema comes from the village Aubais, which is a medieval village south of Nimes, in the Languedoc. In the past the villagers were proud to say that they were from Aubais itself
In 2002 10 hectares of vineyards in the outlying Liverna valley were purchased. Protected from the worst of the weather by wooded hills and garrigues, 60 year old Carignan and Grenache vines, and more recently planted Syrah, Cabernet Sauvignon, Chardonnay and Viognier, have been cultivated on organic lines from the outset. Official certification is in progress. The aim is to create real “vins de terroir” that explore what each grape variety can express in terms of fruit imprinted with the character of their surroundings. The terroir is limestone and clay based on rock formations that date back 93 million years. Hand picked bunches of grapes arrive at our modern winery in crates, where temperature-controlled stainless steel vats allow the exclusive use of natural yeasts, and also optimal sulphite use. Barrel-ageing in new and used French oak demi-muids follows. Minimal intervention, and maximum expression.
