Calvados is a strong brandy-like alcoholic beverage (40% - 45%) obtained by distilling apple cider. The drink comes from the department of Calvados in Normandy.
The apple cider is distilled twice, resulting in a distillate with an alcohol content of 69% to 72%. Hereafter follows a maturation in oak barrels. The aging time can vary from 1 to 5 years, and can be further aged for up to 100! years. During the ripening process the distillate loses a part of its alcohol. Before the calvados is sold, it is colored with a small amount of caramel, but it isn't sugared, so that the dry taste of the Calvados is maintained
Pommeau is an alcoholic beverage from the French regions of Brittany and Normandy which is made by mixing jong , one year old , calvados with concentrated apple juice until the mixture has an alcohol content of 17%.
The method for mixing a brandy-like product with juice is a similar process to that of fortified wines such as port and sherry. The result is a beverage with taste of vanilla, caramel and butterscotch that is usually drunk as an aperitif or with food with melon, blue cheese, chocolate or apple.
